If you’ve always wanted to be that home cook who improvises their way to a delicious meal, Eko’s Cook Together series might just be what you’ve been waiting for. Each interactive video takes a choose-your-own-adventure approach to cooking, making it easy to master different variations of a recipe.
In this recipe for scallopini, Daniel Holzman, chef and founder of The Meatball Shop, walks viewers through the Italian classic — a thinly sliced cutlet that’s pan-fried and drizzled with a reduction sauce — and shows us how to make it with three different sauces while also giving options to make it pescatarian or gluten-free.
It starts by letting you choose the number of servings you’d like to make (anywhere between one and 10, so bring on the dinner parties). You then get to enter any dietary restrictions you may be cooking for, what type of protein you’re using (chicken, veal, or fish), and if you’d like to dredge the protein in breadcrumbs or not. Finally, you choose the sauce, and there are three options: Madeira (mushrooms, shallots, garlic and thyme), lemon-caper (lemon, capers, garlic and parsley), or honey mustard (dijon, honey, garlic and rosemary). You can get a traditional recipe that you read or let Holzman walk you through it step-by-step in a video — and, of course, you can do both. The best part is the video pauses between each step and waits for you before moving to the next step.
Once you master one variation, you can try another (or another Eko Cook Together recipe like Meatballs or Ramen Bowls) . Pretty soon you won’t even need that recipe.
